Ok, this recipe is almost too easy to share but I have to for one reason:
I can’t be the only person who needs to know what to do with all of the apples their kids brought home from your family day of apple picking. Yep, I knew you’d feel me. Behold, my recipe for the ideal Fall Salad, perfect for a super quick toss-together addition to any get together or if you need a go-to bring along dish for holiday meet ups or lunches. Stores in a sealed jar overnight and travels well – just hold off on adding the balsamic until you’re ready to serve.
Spinach, Apple and Goat Cheese Salad
Spinach
Sliced apple, skins on
Orange Cranberry Goat Cheese
Spiced Pecans
Shaved red onion
Balsamic Vinegar
Slice apples and soak in a bit of Sprite for a minute or two to keep from browning. I like Sprite over lemon juice because, to me, the Sprite doesn’t add any distinguishable flavor
Crumble goat cheese – if you can’t find the Orange Cranberry, any plain or non-herb flavored goat cheese will be perfect.
Toss washed spinach leaves, soaked apple slices, crumbled goat cheese, thinly sliced red onions and spiced pecans together.
Add Balsamic Vinegar to taste prior to serving or allow guests to add to their liking!
See, so easy, but oh so pretty and always a crowd pleaser! I’ll actually be serving on Thanksgiving as our lighter option (you know, to balance out all of that mac and cheese).
