Good Morning Ya’ll!

I hope everyone had a fabulous weekend – we had one of those perfect weekends where you don’t have anywhere to go, nothing planned and no work to do but we managed to get tons done, go some really fun places and lay around and be lazy all at the same time.
I want to tell you about our trip to the farm and Herman Pond in a separate post, so for now I’ll leave you with a few pics and a quick pumpkin recipe:

Starting our Saturday off right with Frank’s and coffee that tastes like cream and sugar

Our first fire of the season….I know it’s weird but I can’t help but think that this fireplace has been warming families for more than 100 years…cheesy, but it’s crazy to think about

We decided to skip real meals on Saturday and snack all day instead. We made homemade salsa….(God, I love the food processor we got as a wedding gift!)

And a healthier version of Velveeta Crack Dip with turkey instead of sausage or hamburger

I’m sure a bunch of you have seen Pins that look like this:

I couldn’t imagine that anything could be that simple – and I’ve always been curious about the brownie mix and a can of soda recipes so I thought I’d try these muffins first (I can’t imagine ruining a batch of brownies…I’d probably eat the ruined ones, so pumpkin muffins sounded safer)

Believe it or not, it really worked.
You literally add the pumpkin to the cake mix – no oil, eggs, butter- and mix.
The batter will be sticky and if you mix by hand be sure to search out all of the little lumps of cake mix

They aren’t pretty but they are yummy.
It’s important to note that this recipe makes muffins and not cupcakes. Justin saw the cake mix and thought I was whipping up cupcakes….sorry to disappoint, but these pups are definitely muffins with a hint of sweetness from the cake mix.
Next time, I might toss in a few chocolate chips…

The cake mix was on sale for $1 at our grocery store and we had the pumpkin in the pantry so we paid $1 for 17 muffins. Not too shabby!
