I am so excited to finally share this recipe! At the beginning of the Summer, I was asked to create a signature cocktail to serve at a fun Summer Supper hosted at a fabulous art studio here in Greenville. All of the attendees were creatives in their respective fields – art, design, makers, chefs – the list goes on. I was thrilled to put my stamp on the event with a Lemonade Sangria made complete with Blueberry Lemon Popsicles that melted quickly in the summer heat and proved to be the perfect conversation starter to begin the night.
More details on the Supper are coming soon but for now, here’s the recipe for my Lemonade Sangria with Blueberry Lemon Popsicles.

Lemonade Sangria with Blueberry Lemon Popsicles
Ingredients
4 bottles of table white wine
3/4 of a 2 liter of sprite
4 large lemons sliced, seeds removed
1 small lemon sliced, seeds removed
handful of blueberries
1 cup of water
1 cup of pre-made lemonade
For the Popsicles
fill each Popsicle mold with:
a mix of half water and half pre-made lemonade
(it is important to cut the lemonade as the flavor will become concentrated once frozen and incredibly tart)
2 small lemon slices with seeds removed
3-4 blueberries
add Popsicle sticks and freeze
For the Sangria:
Mix 4 bottles of chilled white wine (I used a dry Riesling) with 3/4 of a 2 liter of Sprite or Diet Sprite
Add all of the remaining lemon slices (I used 4 large) with seeds removed
To serve:
Place a Popsicle in each glass just as guests are arriving
pour wine mix over the Popsicles
as the Popsicles melt, the fruit and lemonade combine with the wine mix to create the Lemonade Sangria! Use your Popsicle stick to stir and enjoy!
